I love this vegan pancake recipe! It’s healthy and perfect for winter or early spring mornings to help give you energy and keep you nicely full up! It makes 4 small thick pancakes. Enjoy!
Ingredients
1 cup buckwheat flour
1 cup almond milk (or any milk of choice)
half tsp baking powder
1/3 of a banana
1 tbsp almond butter
Method:
Blitz all ingredients in high speed blender
Divide mixture into 4 portions
Pour 2 at a time into pan with a little oil heated to medium
Cook until browned, flip over and repeat
Serve with your favourite toppings - mine are a drizzle of maple syrup, sliced bananas, a handful of cacoa nibs and a dusting of cinnamon
