Healthy Pancake Recipe

I love this vegan pancake recipe! It’s healthy and perfect for winter or early spring mornings to help give you energy and keep you nicely full up! It makes 4 small thick pancakes. Enjoy!

Ingredients

  • 1 cup buckwheat flour

  • 1 cup almond milk (or any milk of choice)

  • half tsp baking powder

  • 1/3 of a banana

  • 1 tbsp almond butter

Method:

  1. Blitz all ingredients in high speed blender

  2. Divide mixture into 4 portions

  3. Pour 2 at a time into pan with a little oil heated to medium

  4. Cook until browned, flip over and repeat

  5. Serve with your favourite toppings - mine are a drizzle of maple syrup, sliced bananas, a handful of cacoa nibs and a dusting of cinnamon
